Last year, I ventured into the wine world and co-founded Go There Wines, a social impact wine company that uplifts the stories of winemakers changing the game (and making damn good wine while doing it) in their industry. I also have a cookbook, Maydān, that explores bold flavors, accessible, shareable recipes, and overlapping food ways, spanning from Lebanon to Morocco, from Oman to the Republic of Georgia.

Friday, October 17: Arrival in Amman
Arrive on individual flights into Amman (Queen Alia International Airport – AMM) and transfer independently to your hotel in Amman. In the evening , meet your fellow travelers and tour host, Rose Previte, during a Welcome Dinner at Sufra Restaurant, a beloved local spot known for its traditional Bedouin dishes and Levantine classics.

Saturday, October 18: Amman
Your first full day in Jordan begins with a guided tour of Amman’s most iconic landmarks, where you will learn how this ancient land is home to a relatively new country that is comprised of a melting pot of immigrants, migrants, and refugees. Visit the impressive 6,000-seat, 2nd century Roman Amphitheater and the Citadel, an archeological site that contains ruins of the Temple of Hercules, a Byzantine church, and the Umayyad Palace. Afterward, dive into Jordanian cuisine with a hands-on cooking class and lunch at Beit Sitti, founded by three sisters who honor their grandmother’s legacy by sharing her cherished recipes. Conclude the day with dinner and a wine tasting at Dara, where Palestinian Jordanian Chef Sara Aqel highlights local producers and winemakers alongside the flavors of the region.

Sunday, October 19: Jerash
Travel north to Jerash, a UNESCO World Heritage Site celebrated for its remarkably well-preserved Roman ruins. A guided tour takes you though the grandeur of Hadrian’s Arch, the Temple of Artemis, and the vast olonnaded Forum, all dating back to the 2nd century. Along the way, engage in a conversation about today’s Jordan – who are modern Jordanians, and what is it like to live among the remnants of such an ancient civilization? Pause for lunch at Beit Khayrat Souf, a woman-owned farm-to-table restaurant established to support women’s employment and leadership in northern Jordan. Enjoy locally sourced dishes while hearing about the community’s efforts to empower women. Then, participate in a hands-on workshop to learn traditional techniques for drying fresh herbs and spices, which preserves their flavors, colors, and essential oils. Return to Amman for dinner at Alee, where Rose’s close friend Chef Ali Ghzawi transforms the memories of his mother’s cooking into modern Levantine dishes.

Monday, October 20: As-Salt
Begin your day with a visit to the historic city of As-Salt, when you’ll explore the art of olive harvesting, curing, and pickling during a visit to a traditional olive farm. Return to Amman for an afternoon at leisure, where you may choose to browse through the shops on Rainbow Street, pop into a contemporary art gallery, or relax at your hotel. In the evening, immerse yourself in Amman’s vibrant street food scene with a guided tour through its bustling fruit and vegetable market. Learn about the deep-rooted Jordanian coffee culture and savor bites of local delicacies from creamy hummus and crispy falafel to the sweet, syrupy layers of kunafa.

Tuesday, October 21: Petra
Check out of your hotel and journey south to the historic Shobak Castle, an enchanting 12th century fortress originally built under the reign of King Baldwin I. Gather for a group lunch featuring mansaf, Jordan’s beloved national dish made with tender lamb, fragrant ride, and a jameed, a tangy fermented yogurt sauce. Continue to the egendary city of Petra and after time to refresh at your hotel, roll up your leeves and help prepare an authentic Jordanian dinner at Petra Kitchen. rom chopping and grating ingredients to plating an array of traditional meze dishes, you’ll end the day with a shared feast that celebrates the flavors of Jordan in true local style.

Wednesday, October 22: Petra
Spend today exploring Petra, the mesmerizing archaeological site once home to the ancient Nabataean people and first seen by Western eyes in 1812. On a guided tour, journey through the narrow, naturally sculpted cliffs, listen to stories of Petra’s remarkable past, and marvel at the iconic Treasury, said to hold the secrets of pharaohs. Enjoy time to wander at your own pace through the city’s vast ruins and absorb its mystical atmosphere. Afterwards, continue to the Wadi Rum desert valley, where the ladies of the Disi Women’s Cooperative will demonstrate the art of traditional Bedouin flatbread, served alongside a classic “upside down” maqluba dinner featuring lamb and rice.
